For guests who are vegetarian, vegan and allergic to gluten

For guests who are vegetarian, vegan and allergic to gluten, please contact us through email or fax at least 7 days prior to your stay. Requests beyond mentioned timeline will not be accommodated.

Tuna, Katsuobushi(Dried Bonito flakes) and Kombu(edible seaweed) are the main ingredients used to make Dashi(soup stock) in our KAISEKI Dinner(Japanese Multi-course Meal).

 

Please note that Gluten-free meals are made from exclusively-made seasonings and are cooked separately in a hot pot and making of concentrated Dashi(Soybeans soaked in water for a few days) would take time to prepare.

 

Since seasoning inside the meal contains Dashi(soup stock) and gluten, requests for complete removal of dashi and gluten would take time, for that reason, an additional charge would incur.
